My goal is to simplify my life so I am beginning to use my crockpot a great deal! Tonight we are having: black-eyed peas cooked in the crockpot, Cracker Barrel's Chicken Tenderloins, rice, Jello, frozen turnips, and cornbread.

The recipe for the tenderloins was found here at TKL. I've posted how to make rice using the microwave and I will be using frozen turnips with a twist. Whenever turnip roots are plentiful, I buy a great deal of them. I peel them and blanche them and freeze them. Whenver we want turnips,I pull out a package of the turnip roots to put in the boiler along with the package of frozen turnips. They are delicious! They aren't as good as my mama's, but they are so much EASIER!BLACKEYED PEAS--ALABAMA STYLE

1 pkg. blackeyed peas, washed with all grit removed
1 ham bone
4 cups water
1 onion, diced
2 tsps. garlic, minced
seasoned salt and pepper

Put the peas in a boiler and bring to a boil. Cover the peas and remove the pot from the eye of the stove. Let the peas soak overnight. in the morning, drain the peas from the water and rinse thoroughly. Add the ham bone to the crockpot along with the onions, garlic, peas, and water. Season with salt and pepper. Put the crockpot on LOW and let cook for 8-10 hours. Serve the peas over rice.

We will be having Crockpot Pork tomorrow night. I will make barbecue sandwiches from the pork that I cooked in the crockpot.

CROCKPOT PORK

1 pork roast--3-4 pounds
2 onions, sliced
1 bell pepper, sliced
1 small jar mild pepper rings, with juice
2 pears, washed and sliced
2 T. red wine vinegar
Seasoned salt and pepper

Put the onions, bell pepper, and pears in the bottom of the crockpot. Add the pork roast. Pour the pepper rings and juice over the pork roast. Add the red wine vinegar, salt, and pepper. Cook on LOW for 8-10 hours. Remove the pork from the crockpot and put in a large container. Refrigerate the pork. Drain the liquid from the crockpot into a colander. Throw all of the "veggies" away. This broth can be used to make rice. Replace the water with this broth mixture.

To make barbecue, remove the pork from the refrigerator and remove all fat from the roast. Put the pork into the crockpot along with a bottle of barbecue sauce and 1/2 of a large can of lemonade, diluted. Let the mixture become warm and serve on hamburger buns.
