Good Morning Everyone!

Today I woke up thinking about tonight's dinner. I am in the mood for my mom and aunt's rustic style of cooking pork chops. And I want lumpy garlic mashed potatoes and peas...so I can ladle some of the delicious sauce over...ummmmm!! I think I shared this easy rcipe with Renee on Tuesday and that's what got me going!

It's another beautiful day here and I just can't wait for the beginning of Fall...I want it to get nippy and cool!

Rustic Style Pork Chops

serves 2

2 loin pork chops, about 1 1/2inch thick
1 lemon and 1 orange
Squeeze orange juice and lemon juice over about 1/2 c. mixture. Then grate 2 garlic cloves and spread over chops. Salt and pepper them. You may sprinkle rosemary, thyme, basil on them. Close them up, shake a bit and let marinate for at least 4 hours, overnite even better. When ready to cook your pork chops will be delightfully marinated and perfumed.

Next put them with the marinade in a metal oven baking pan with a lid on, sprinkle about 1 T. worcestershire sauce on, pour over 1/2 c. dry cooking sherry (vino seco) and some cut up onions, about 1/2 c. Close up and bake in oven for 1 hour at 350. Check halfwayt thru cooking to see if you need some more liquid such as water into the pan. At the end, schmear some orange marmalade on each chop and let cook for 5-10 minutes more without lid on. Let the liquid boil down a bit so that you have an intensely flavored gravy. Serve with lumpy garlic mashed potatoes.

Lumpy Garlic Mashed Potatoes

serves 2

3 potatoes, peeled and cubed
2 garlic cloves
1/2 stick butter
3 T. sour cream
1 T. chopped chives
salt and white pepper to taste
warmed milk, about 1/2 cup or so

In saucepot, cover potatoes with water and drop in 2 garlic cloves. Bring to a boil and let cook over med. high til potatoes are tender.

Drain. Place potatoes and garlic in pot and mash with hand-masher. Try to leave lumps in, stir in butter and sour cream, add warm milk to desired consistency. Stir in chives and spices.
