Tonight I am making my favorite Beef Stew, I received the recipe from a former co-worker who has since passed away due to Breast cancer. She was a fabulous cook. I am serving a romaine lettuce salad with a homemade dressing/croutons that has a similar in taste to Caesar dressing. The recipe is compliments of my Mother. For dessert I will be serving Peach Bavarian, I located this recipe in one of the earliest issues of Taste of Home. I hope you all enjoy!
Devilish Beef Stew
1 1/2 lb beef stew meat - 1 inch cubes 1/3 C flour 2T Oil 2 Cups water 1T dry mustard 1 1/2 tsp salt 1 clove garlic, minced 1 tsp chilli powder 1 tsp worcestershire 1 1/2 C water 4 medium potatoes, peeled and quartered 3 small onions, peeled and quartered 4 large carrots, scraped, 2 inch peices 2 Celery stalks, 2 inch pieces 1/4 Cup water
In a plastic bag toss beef cubes with flour to coat, reserve remaining flour. In a dutch oven brown beef 1/3 at a time in hot oil. Return all the meat to the pan and remove from heat. Add 2 Cups water, mustard, salt, pepper, garlicm chilli powder, worcestershire. Simmer covered 1 - 1 1/2 hours, or until meat is almost tender. Add 1 1/2 Cup water, potatoes, onions, carrots, celery and simmer for 30 minutes.
For gravy, remove meat and veggies, skim fat. Blend 1/4 Cup water with reserved flour until smooth, slowly pour into hot liquid. Cook and stir until thickened and bubbly, make sure the flour cooks off. Season with salt and pepper, return meat and veggies to the gravy. Heat through, serves 8 people.
Almost Caesar Salad Dressing
1 egg (use raw egg at your own risk :P) 1 clove garlic 1/2 Cup vegetable oil Blend until thick add 1/2 Cup Parmesan cheese (fresh) 6 T white vinegar 6 drops of tabasco Mix well and pour over green and croutons.
Peach Bavarian
1 16oz Can sliced peaches 2 pkg (3oz) peach gelatin 1/2 Cup sugar 2 Cups boiling water 1 tsp almond extract 1 8oz carton cool whip (regular or light) additional fresh peaches if desired
Drain peaches, reserving 2/3 Cup juice. Chop peaches into small pieces and set aside. In a bowl disolve jello and sugar in boiling water, stir in reserved juice. Chill until slightly thickened. Stir extract into cool whip and gently fold into jello. Fold in peaches. Pour into a 6 Cup mold and chill overnight. Garnish with fresh peaches if desired.
