How about rice with an aboundace of stir-fry vegetables and a sweet-sour sauce -
Onion, garlic,fresh ginger, sugar peas, red bell pepper, bean sprouts, baby carrots is good, maybe some grapes and/or pineapple chunks too.

Or Pasta salad with onions, corn, cellery and cheese

Or vegetable soup - tomato soup and corn fritters and a salad. Vegetable patties, or lots of boiled veggies with cheese-sauce or--
