Elissa, I'm still looking for my conch chowder recipe, but here you go:

Conch Fritters

2 medium conch, cleaned and skin removed
1/2 small sweet red pepper
1 small onion
1 stalk celery
1 egg
1 cup milk
2 tablespoons tomato paste
1 teaspoon baking powder
1-1/4 cups flour
1 teaspoon hot sauce
1 teaspoon salt

Put conch, sweet pepper, onion, and celery through a meat grinder. Add remaining ingredients to make a batter. Drop by tablespoonfuls into hot fat and fry for approximately 10 minutes, or until golden brown. Serve with cocktail (recipe below).

(For miniature conch fritters, use same recipe but drop by teaspoonfuls into hot fat. Serve these as appetizers.)

Cocktail Sauce:

1/2 cup bottled cocktail sauce
1/2 teaspoon (or more!) prepared horseradish
1 teaspoon hot sauce
salt to taste
fresh lemon juice to taste
