Conch Chowder
1/4-- 1/2 lb salt pork or bacon 2 onions, chopped 1 green bell pepper, chopped 1/2 C chopped celery 2 quarts water (or more) 1 can hominy, drained 2 cans tomatoes salt & pepper 2 cloves garlic, minced 1 tsp. thyme 1 tsp. oregano 1 can cream of mushroom soup 1 tsp. curry powder 1 1/2 lbs. conch, ground 1 large pkg. mixed, frozen soup vegetables
In large pot, fry out salt pork. Saute onion, green pepper,& celery. Add water, hominy & tomatoes & cook for 20 min. Add ground conch. Add salt & pepper, garlic,thyme, oregano, mushroom soup, curry powder, & soup vegetables & simmer until vegetables are tender. |
