Yesterday's dinner was quick and delicious, we have been a little under the weather with head colds here and I wanted something simple so we had Crockpot Italian Beef Sandwiches (leftovers from the freezer but still ymmy!), coleslaw, corn on the cob, and a caesar salad. YUM!
Crockpot Italian Beef (Hot Beef Sandwiches) Serving Size : 6
4 pounds beef roast, either chuck or eye round 2 packages Good Seasons Italian salad dressing mix 2 cans beef broth 1 green pepper -- sliced or 1 jar of pepperchini's with juice
Place beef in crockpot. Sprinkle with dressing mix. Pour broth over beef and add peppers. Cover and cook on low 8-10 hours. Remove beef and shred, return to juices. Freezes well.
Serving Ideas : I serve on hard crusty rolls with provolone cheese, roasted garlic and roasted red peppers.
NOTES : Great for parties.

This is the best recipe for coleslaw, tastes like KFC's but better!
1 head green cabbage -- shredded 1 small carrot -- shredded 2/3 cup mayonnaise 1/4 cup sugar 2 tablespoons milk 2 tablespoons vinegar 1/2 teaspoon salt 1/4 teaspoon pepper
Toss cabbage and carrot in a medium bowl. Combine remaining ingredients and pour over cabbage mixture; toss to coat. Cover and refrigerate several hours or overnight. Best overnight to allow flavors to blend.
