Hi Jill;
I usually make a sort of spanish rice recipe. Brown either ground beef, turkey or sausage or a combination. Chop up a large onion and a couple cloves of garlic and add to the meat while browning, salt and pepper to taste. After the meat is browned drain off any grease. Add a couple large cans of chopped tomatoes, a can of whole kernel corn, drained, a can of black beans, rinsed and drained. Add about a cup of rice, mix all together. Cut peppers in half from stem to bottom, remove stem and membrane. Lay peppers in a glass baking dish, size depending on how many peppers you are doing. Pour the rice, meat,tomato, veggie mixture into and around the peppers. Cover with foil and bake at 350* for 45-60 minutes or till peppers are tender when poked with a fork. We like to sprinkle grated parmesan on these when we eat them.
Sorry the measurements aren't very precise, this is one that I sort of do as I go along.
