Puerto Rican Pork Roast 1

PUERTO RICAN PORK ROAST

7 cloves of garlic, crushed
2 teaspoons oregano
1-2 teaspoons of salt
1 teaspoon ground black pepper
2 tablespoons orange juice
juice of 4 limes
3 tablespoons of olive oil
pork roast
(or 4 chicken breast halves)

Mix everything. Put marinade in zip lock bag (squeeze out all the air ) with roast for a minimum of 4 hours, overnight is better. Turn over once or twice. Can marinate as long as 48 hours. Chicken is great cooked on grill.

Caribbean Pork Roast

2 to 2-1/2 lb pork boneless double center loin roast
1 cup orange juice
1/2 cup lime juice
1 1/2 teaspoons ground cumin
1 1/2 teaspoons red pepper sauce
3/4 teaspoon ground allspice
1 medium green bell pepper -- cut in 1/8 ths
1 medium onion -- cut in 4 ths
4 cloves garlic -- crushed
salt and pepper
1 1/2 teaspoons sugar
1/2 teaspoon salt

Trim fat off pork. Pierce pork deeply all over with a meat fork or skewer. Place pork in heavy resealable plastic zip-top bag. Place remaining ingred. except and pepper, sugar and 1/2 tsp. salt in blender or food processor. Cover and blend on high speed until smooth. Pour blended mixture over pork. Seal bag; place in a dish. Refrigerate at least 4 hrs. but no longer than 24 hrs., turning bag occasionally.

Heat oven to 325 degrees. Remove pork from marinade; refrigerate marinade. Sprinkle with salt and pepper. Place pork on rack in shallow roasting pan. Insert meat thermometer so tip is in center of the thickest part of pork and does not rest in fat. Roast uncovered 1-3/4 to 2-1/4 hrs. or until thermometer reads 155 degrees. Cover and let stand 15-20 min. or until thermometer reads 160 degrees. Remove pork from pan. Cut into slices.

Pur marinade into saucepan. Stir in sugar and 1/2 tsp. salt. Heat to boiling; reduce heat. Simmer uncovered about 5 min., stirring occasionally, until mixture thickens slightly. Serve over pork.

Apple Cider Pork and Vegetables

4 sml sweet potatoes, peeled -- cut into 1/2" slices
1 (6oz) pkg mixed dried fruit
1 medium onion -- thinly sliced
1 bay leaf
3/4 tsp salt
1/2 tsp pepper
1/2 tsp dried rosemary -- crushed
1/4 lbs lean bonless pork -- cut into 1" cubes
1/2 cup flour
2 tbl veg. oil
1 cup apple cider

Place first 7 ingred. in a 5-qt. slow cooker; set aside. Dredge pork in flour; brown in hot oil in a skillet over med.-high heat. Remove pork, reserving drippings in skillet. Place pork in cooker. Stir apple cider into reserved drippings; pour over pork. Cook, covered, on LOW 6-8 hrs. Remove bay leaf.

Honey Sesame Tenderloin

Honey Sesame Tenderloin
August, 1997
1 pound pork tenderloin
1/2 cup soy sauce
2 cloves garlic, minced
1 teaspoon dry ginger
1 bablespoon sesame oil
1/4 cup honey
2 tablespoons brown sugar
4 tablespoons sesame seed

1) Combine soy sauce, garlic, ginger, and sesame oil. Place tenderloin in a heavy plastic bag, pour soy mixture over to coat. Let marinate 2 hours at room temperature or overnight in refrigerator.
2) Remove pork from marinade; pat dry. Mix together honey and brown sugar in a shallow plate. Place sesame seed on a separate shallow plate. Roll pork well in honey mixture, coating well; then roll in sesame seed.
3) Roast in a shallow pan at 400 for 20 to 30 minutes, until meat thermometer inserted registers 160. Remove to serving platter, slice thinly to serve.
