I have gotten these from a couple of places. An upscale grocery store in our area printed a pamphlet & there is a website for quantity recipes, if you use a search engine (like google) & put in growlies you will find it. You can search under Byerlys also (they are the grocery & something may be on their site, they always have fabulous recipes, too). Anyway, here's the info I found.
Condiments (This ifo came from Byerlys & is for 50, so double it for your needs.)
Ketchup (approx. 66 - 1 T. serving) use 1 (40 oz) bottle Mayonnaise (approx 64 - 1 T. serving) use 1 qt. Mustard (approx 51 - 1 tsp serving) use 1 (9 oz) jar Butter - 1 to 1 1/2 lbs Mixed nuts - 1 to 1 1/2 lbs Olives or pickles - 2 qts (it doesn't specify whether these are hamburger pickles, baby dills, or reg pickles sliced into wedges) Baked Beans - (1/2 C serving) 1 1/2 to 2 gallons Potato Salad* - (1/2 C serving) 1 1/2 to 2 gallons Sugar Cubes (for 1 C coffee or tea) - 1 lb box (108 to 126 cubes) Cream for Coffee - 1 qt yields 62 (1 T. serving) Ice - 1 (5 lb) bag for about 10 people
*Note on potato salad: 5 lbs = 25 servings 10 lbs = 50 servings 20 lbs = 100 servings This depends on the amounts of other ingredients in the salad. 3 lbs boiling potatoes (7-8 large)=8 C. cooked & cubed
Some amts above are listed in gallons. When purchasing an item from the deli, amounts translate this way: 1 pt = 1 lb = serves 2-3 1 qt = 2 lbs = serves 4-6 1/2 gal = 4 lbs = serves 10-12 1 gal = 8 lbs = serves 20-25 (I hope this didn't confuse the issue for you)
