ISO: HELP! Planning Buffet for 400+

I have volunteered to "organize" a reception for our church which is merging with a much larger church. The crowd is expected to be 400+. I desparately need advice on what types of dishes to serve; how to keep costs down (volunteers will be making the food); and how to manage all of that food, people, etc.!! There will only be about 12 or so ladies doing the cooking so how many dishes should each person make? HELP!!!!!
