I have to give you the web address where I found this recipe - you have to see the photo to get the effect -- it's really pretty - ideal for the centerpiece of the appetizer table: http://www.californiaheartland.org/archive/hl_329/endive.htmBlossom-Shaped Seafood Dip 1/2 small onion, minced 1/2 cup celery chopped 1 1/2 cups cooked crab, shrimp, or lobster 8 oz. cream cheese softened 1 tbsp. horseradish 2 tbsp. mayonnaise 6 endive, separated into leaves (save tiny inner leaves for a salad) Blend all of the ingredients (except the endive) until well mixed. Refrigerate for at least one hour. Let soften to serve. To serve, form the mixture into a loose ball. Place the endive leaves into the dip with the wide (root) end , starting around the bottom and working your way around to the top to create a blossom effect. Use the endive leaves to scoop the dip.
