Honey-Barbecued Chicken Serves 4
1 (2 1/2-3 lb.)broiler-fryer, split(or chicken breasts) 3/4 c .butter or margarine, melted 1/3 c. vinegar 1/4 c. honey 2 garlic cloves, minced 2 tsp. salt 1/2 tsp. dry mustard dash of pepper
Place chicken in a large shallow container. Combine remaining ingredients, stirring sauce well. Reserve some of the marinade to use at basting sauce. Marinade the chicken for atleast 30 minutes in fridge.
Grill chicken, skin side down up, over hot coals 30-35 minutes or till done. Turn & baste frequently with sauce, till chicken is done & sauce has adhered to chicken. ______________________________
Double Mustard Chicken Marinate: 2 cloves garlic -- pressed 1 teaspoon salt 1/3 cup brown sugar 1/3 cup apple cider vinegar 1/4 cup dijon mustard 1/4 cup honey mustard - OR - 1/4 cup Home-Style Inner Beauty Hot Sauce 2 teaspoons dried thyme 2 teaspoons dried tarragon
8 boneless skinless chicken breast halves Whisk all ingredients together and marinate the chicken for at least one hour. Grill until cooked throughout HEALTH REMINDER: Do *NOT* use the leftover marinade as a basting or serving sauce for the chicken. Because it has been in contact with theraw chicken, you run the risk of salmonella by using the uncooked marinade.

Teriyaki Mushrooms and Steak (This marinade could also be used on chicken, pork, seafood, etc.) Yield: 4 portions
1 pound medium-sized fresh white mushrooms 1 pound flank or boneless sirloin steak 1/2 cup firmly packed brown sugar 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger 2 teaspoons minced garlic 1 cup pineapple juice 1/2 cup soy sauce
Preheat grill or broiler. Trim stem ends of mushrooms; thread lengthwise on skewers. In a large shallow dish, place steak and mushroom skewers. To prepare teriyaki sauce: In a small bowl, combine brown sugar, ginger, garlic, pineapple juice and soy sauce. Pour over mushrooms and steak. Let stand at room temperature up to 30 minutes, turning occasionally, or marinate several hours in refrigerator. Grill mushrooms and steak, turning once and basting with teriyaki sauce, until mushrooms are soft and browned, and steak is cooked as desired (about 10 minutes for medium-rare). ________________________________
