I tried the cheese torte using 4 layers.
Layer 1, Bacon Cheese Spread
Layer 2, Cream cheese mixed with chives, toasted chopped pecans, feta cheese, parsley flakes, and a little mayonnaise so it would spread easier, you could use cream to thin it with. I liked this, but would add more feta cheese next time, I like the tang. I don't have proportions, just did it by taste.
Layer 3, pimento and cheese, I left the pimentoes on the chunky side, for show.
Layer 4, Cream cheese mixed with chopped pimento stuffed olives and parmesan cheese. Again I did this by taste.
It set up nicely and looks pretty unmolded, I made up 3 small containers. One I did toated pecans on top, and another chopped chives. I lined one container with saran wrap and another I sprayed with pam. The one with Pam came out very easily, but I did have to run a knife around it to get it started. If you have a 4 or 6 inch springform pan I would suggest you use that. I plan to use 6 inch springform pans.
When you catch your breath after all the rush, would you let me know how you wedding turned out and what foods you served. I have one to do in Dec. and Jan., 3 weeks apart and maybe you have some food ideas that I haven't come up with. Good Luck
