COCONUT SHRIMP
1 1/4 cups all purpose flour 1/4 tsp. seafood seasoning (Old Bay) 1 egg, beaten 3/4 cup pineapple juice 1 pkg. flaked coconut 1 lb. shrimp, peeled and deveined oil for frying
In a bowl, combine the flour, seasoning, egg and juice until smooth.
Place coconut in a shallow dish.
Dip shrimp into batter, then coat with coconut.
Fry oil at 375degrees F a few at a time for 1 1/2 minutes or until golden brown, turning occasionally. Drain on paper towels.
