Zucchini Pineapple Chips
You can leave the cooked zucchini marniate in the liquid for a few days to intensify the flavor. The dried product tastes like a sweet zucchini pickle. When using small zucchini the tender peels can be left on if desiried. Experiemnt by removing the peel on some keeping it on others. When using large zucchini, remove the seeds and peel.
4 cups peeled and sliced into 1/14 inch slices 12 ounces of pineapple juice 1/4 cup sugar 1/4 cup lemon juice
Place the pineapple juicie, sugar and lemon juice in a 2 quart pan. Stir and bring to a full boil over high heat. Reduce heat to medium high and add fresh sliced zucchini. Press all the slices gently into the liquid. boil lightly for 10-15 minutes until the slices turn an olive green color. Gently pour into a large strainer and drain. Allow to cool. Place slices on dehyrator line with a clean a screen sheet and dry at 135 for 3-5 hours, depending on the size of the slices. dry until crisp. yield: 1 cup. Note: Remember that foods feel softer when warm. When testing for dryness, remove pieces from the dehydrator and allow to cool before testing.
