I played around and came up with this recipe this week end using my first tomatillos. Only made abaout 1 1/2 cup but I didn't want a lot until I saw how I liked it.

3/4 pound fresh tomatillos
5 cloves garlic
1 med onion
1 habanero pepper or 1/2 cup chopped jalapenos
Place the above into a food processor or blender and chop into small pieces. Place in a pan with one cup vinegar and a cup sugar and bring to a boil. Turn the heat too low and simmer for about one hour or until liquid is almost gone. Add 2-3 sprigs of fresh cilantro and place in jars and seal in boiling water bath. Had some on some grilled chicken and tried some on wheat crackers. Pleased with both.
