I'm not confusedat all, and thanks so much for all your help. Actually, I'm using the eggplant in place of the pasta for my husband. He's on the Dr. Atkins diet revolution (he's lost 60 lbs), which means no pasta-in fact, little to no carbohydrates. So I'm in search of some reasonable substitutions for some of the ingredients in our favorite dishes, like lasagne. I found that spaghetti squash is an excellent substitute for spaghetti noodles. I'm so glad that I'm not on this diet(thank the good lord for my fast metabolism!), I would never survive! I'm a pasta-holic. Any way, now my search goes on for a meatloaf recipe that doesn't involve bread crumbs, crackers, oatmeal, or rice.(Have I stumped you yet?), or how about a crustless quiche? Thanks! L.Asher
