ZUCCHINI CUSTARD

2 cups shredded Zucchini
1/2 cup egg substitute
1/2 ounce sharp Cheddar cheese, shredded (1/4 cup)
3 tablespoons buttermilk baking mix
2 tablespoons chopped parsley
1 garlic clove, minced
1/8 teaspoon paprika
Pinch ground white pepper

Place zucchini in a colander over a large bowl; let stand 30 minutes.

Spray four (6-ounce) muffin cups with nonstick cooking spray.

With back of spoon, press out and discard all liquid. In bowl, combine zucchini with remaining ingredients, stir together well. Spoon zucchini mixture evenly into prepared cups.

Microwave on High 6-8 minutes or until toothpick inserted in center comes out clean. Let stand 3 minutes; run small spatula around edge to unmold.

Serve hot or cold.
