I just bought a Welbilt ABM2200T secondhand and have the instructions but not the recipe book! The machine has three programs:

1. automatic--choose normal or light by pressing the select button. The machine will warm, knead, rise the dough twice, then bake it. The light selection bakes for 10 minutes less. Total program time is approx 3 hours. Then a keep warm cycle lasts 55 minutes. Remove bread immediately or condensation will form and wet the bread. The machine will beep 20 times during the second kneading, approximately 45 minutes into the process. This is to allow you to add fruit or nuts.

2. If you choose dough, the machine stops before the second rise, about 1 hour 20 minutes total. This is for pizza dough.

3. Programmable timer-- Place a;; ingredients in the container. Press the arrows to choose when you want the bread to be ready, such as 10:00 for ten hours. Then press start and leave for work!
Remember to press stop/reset when you take the bread out.

Hint, spray the kneading blade with non-stick spray before using.

I don't have the recipe book, but this is a 1 pound loaf machine. Use recipes with only 2 cups of flour. I hear the order of adding the ingredients is important. Some machines like dry first then wet, some like wet first. I don't know what this machine likes yet. I hope to try mine out for the first time tonight using generic recipes.
