This book calls for Red Star yeast, I have used different kinds but do mostly stick to Red Star as I can buy it in bulk. You can keep all your flour stuffs in the freezer for longer storage, I keep mine there or the refrigerator. Happy Baking! Place all ingredients in bread pan and press Start. After the baking cycle ends, remove bread from pan, place on cake rack and allow to cool 1 hour before slicing.
