Woodruff relating to substituting some of the things you bought in bread recipes: Millet Flour can be substituted for one-fourth of the wheat flour in breads. Cooked millet can also be incorporated into bread dough as part of the liquid. Quinoa flour can replace up to 15% of the flour in yeast breads. Cooked quinoa can also be incorporated into bread dough as part of the liquid. Rye flour can be used to replace one-half of the wheat flour in breads. Spelt flour can replace regular whole wheat flour in any recipe; substitute 1 cup plus 1 Tablespoon of spelt flour for 1 cup of whole wheat flour. When replacing refined wheat flour, substitute spelt one-for-one.
