I had this problem too and found there are numerous reasons for it. Among them...is the dough too wet? Does your water have chlorine in it? (try bottled water) I switched from honey to maple syrup as the sweetener and fixed my problem (I'd been trying to save some crystallized honey and collapsed my bread by doing so). I hope your problem is solved as easily.
