I have also found that the bread overcooks if left for the full time. I remove the bread 30 minutes before the time is up and it usually turns out pretty good.
I also use a book called
Breadmaker's Guide by Jan Thomson, ISBN 1-57416-049-4, Clear Light Publishing. I find it pretty good. She gives directions for bread machines for all her recipes and I've tried a couple and they've worked well.
One recipe that I use now is:
1 1/2 cups spelt flour
1 cup multigrain flour
1/2 cup white flour
1/4 cup honey
1 tbsp olive oil
1 to 1 1/4 cups water
2 1/4 tsp yeast
1 tsp salt
I add flaxseed meal, sunflower seeds, flax seeds and sesame seeds for a really healthy multigrain bread. But I take it out 30 minutes early. Also watch the water and flour content. Sometimes I have to add more flour at the add-ingredients beep.
I've played with versions of this and this seems to be the best but you can play with the quantities - I just make sure that I use 3 cups of flour total.
