GREEN GARLIC DRESSING

"Use this pretty, tofu-based dressing on any green salad."

1/2 cup (4 ounces) silken tofu
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1 clove garlic
1/4 cup packed fresh cilantro or parsley leaves
Salt and black and red pepper to taste

Place all the ingredients in a food processor or blender and process until smooth.

Makes 1/2 cup

Per tablespoon: 54 calories, 3 g protein, 1 g carbohydrate, 5 g fat (0.7 g saturated), 0 g fiber, no cholesterol, 3 mg sodium. Calories from fat: 75 percent
