LEMON ICE
2 cups water 1 cup sugar, to taste 1/2 cup lemon juice 1 tsp grated lemon rind
In a medium saucepan, dissolve sugar (and honey) in water. Bring to a boil and boil 3 minutes without stirring. Cool completely.
Mix in lemon juice and rind. Pour into (1 1/2 pint) ice cream machine and follow directions for ice cream.
