I just made Baked Alaska last night for a book discussion group. When I was
looking for a recipe for the merange the cookbook suggested to sprinkle the
sugar 1 tablespoon at a time, into the egg whites while the mixer is running.
They said this was to prevent weeping because the sugar is not fully
incorporated into the egg mixture. It worked because it didn't weep. Hope this
helps.
