Here you are, Dee! This recipe is specifically for a baked apple pancake like the one pictured on the Original Pancake House web site I linked on the previous post.

German Apple Pancake
From: Marcia Adams' "Cooking In Quilt Country"

2 large cooking apples
1/4 cup butter, divided
1 cup flour
1 cup milk
6 eggs
1 tsp vanilla
1/2 tsp salt
1/4 tsp grated nutmeg
Confectioners' sugar

Preheat oven to 475F.

Peel, core and very thinly slice the apples; you should have approximately 1-1/2 cups. Melt 2 TBS of the butter over medium low heat in a small fry pan, and saute the apples until they are just tender, about 3 minutes. Keep warm while preparing the batter.

Place a 9- or 10-inch cast-iron skillet or very heavy ovenproof round pan in the oven to heat for at least 5 minutes. When it is well heated, add the remaining 2 TBS of butter to melt and put the skillet back in the oven; the butter should be very hot but not brown when you add the apples and the batter.

While the skillet is heating, place the flour, milk, eggs, vanilla, salt and nutmeg in a blender, and whiz until smooth. (This can also be done with a rotary beater). Remove the skillet from the oven, quickly arrange the warm sautéed apple slices over the melted butter, and pour the batter evenly over all.

Bake for 15 minutes, reduce heat to 375º, and bake 10 minutes longer. The pancake will puff and climb up the sides of the pan. Sprinkle with confectioners' sugar, then cut into wedges and serve warm with maple syrup.
