Jamaican Jerk Chicken Pizza

9" round pizza dough
1/4 cup Jamaican sweet chili sauce
1 cup Mozzarella cheese
1/8 cup roasted peppers
1/8 cup onion
1/8 cup bacon
5 oz. chicken breast
2 tsp. Jamaican Jerk seasoning

Rub chicken breast in Jamaican Jerk seasoning. Grill chicken until cooked throughly. Refrigerate then cut into 3/4" cubes.

Fry the bacon, drain well and set aside.

Spread 1/4 cup sweet chili sauce over pizza dough. Add 3/4 cup Mozzarella cheese and roasted peppers. Red, yellow and orange peppers are recommended. Just roast in the oven until the peppers are soft, then let cool and slice into small pieces.

Add sliced onion and bacon pieces. Add cubes of Jamaican Jerk chicken. Top with remaining 1/4 cup Mozzarella cheese. Bake at 500 degrees 8-10 minutes until crust is crisp and the center of the pizza is bubbly. Serves 2.
