One of the successes of (instructions for) making the Tastefully Simple brand of Beer Bread correctly, is to absolutely NOT stir it very much. You might try that with your other beer bread recipes. However, the Tastefully Simple brand beer bread is even very good made with no beer. I, too, would love to see a copy cat recipe for that bread.
