O.k here goes, I have tried many recipes to duplicate the Baja Salsa and none have come even remotely close except for this one and I think it is sooo tasty and not exactly but close to the real Baja Salsa if anyone else tries it they will have to let me know their opinion

7 firm medium tomatoes
1 small jalapeno
2 cups water
2 tablespoons cilantro, chopped
2 tablespoons onion, choppped
1 glove garlic
dash or so of salt

Heat up the BBQ grill first let it get really hot place 6 of the 7 tomatoes on the grill stems removed stem side down. Grill for about 30 minutes or until the skin is blackened then flip tomatoes over for another 30 minutes or until that side is blackened. When you flip the tomatoes throw your jalapeno on the grill (stem removed) and blacken all sides.

After your hour or so BBQing the tomatoes and jalapeno transfer them from the grill to a bowl to cool for about 15 minutes

Then place the bowl of tomatoes, jalapeno and juices left in the bowl in a blender add your clove of garlic and puree for 30-45 seconds then add your water and blend another 15-30 seconds until all is blended and well incorporated. Pour into a bowl and stir in your onion and cilantro and chop up the tomato you did not BBQ and stir that in too!! Put into the fridge to cool. I think it tastes better the day after you make it gives all the flavors time to mix and mingle!

I just posted this recipe from memory as I have made it so many times now that I threw away the recipe!!!! So if you find it elsewhere very similar chances are it is correct :) The only problem I have had is that I usually put aluminum foil on the grates and put the tomatoes on that and the tomatoes stick really bad to the aluminum foil I have tried spraying it with Pam with the same results. Next time I will try on the actual grates I hope it won't stick as much I just didn't want a mess. If anyone has any suggestions for the tomatoes not to stick please let me know! Hope you guys enjoy the recipe I think it's delicious and easy too!!!
