Olive Garden's Black Tie Mousse Cake
2 c. flour 2 c. sugar 3/4 c. cocoa 2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt plus 1/8 tsp. salt 2 eggs 1 c. black coffee 1 c. plus 3 T. milk 1/2 c. vegetable oil 3 tsp. vanilla, divided 1/4 c. butter 2 c. confectioners sugar
Sift first 5 ingredients and 1/2 tsp. salt together in large bowl. Add eggs, coffee, 1 cup milk, salad oil, and 2 tsp. vanilla; blend until smooth. Pour thin batter in greased 13x9" pan. Bake in 350F oven for 35 minutes.
Meanwhile, cream butter until soft and sir in confectioners sugar, 1/8 tsp. salt, 3 T. milk, and 1 tsp. vanilla. Beat until smooth and creamy adding more milk, if necessary. Spread over warm cake.
