"As a GM for Bickford's I am flattered you want our recipe. You need to use a "German" pancake batter. This has more cake like qualities. Be careful when adding the eggs. Lightly scramble them and fold them in gently. Do not beat. There should be swirls in the batter.
Pre heat your oven to 475-500 degrees. In a cast iron 9 inch skillet coat generously with margarine. Melt on stove top. Add 2 3/4 6 oz. ladles of your mix to pan. Add 12-14 slices of canned well drained apples, spreading evenly in the mix. When edges begin to firm, but before burning commences, place skillet in oven. In about 6 minutes the edges should be rising. When this happens, carefully remove from oven (use mitt). Sprinle cin/sugar mix generously on the top and flip pancake over..gently pushing it down into the pan. Place in oven until edges rise to desired height. Carefully remove from oven and place big plate (enough to fit apple) over the top. Flip and serve before it de-flates! Good Luck!"
