Okay my mom has been working at Chicos for 26 years she makes the tacos, sauce, chilibeans, and shreds the cheese for Customers EVERYDAY here is the recipe

For the Red Sauce:
You need about 3 ripe tomatoes, and about 1 small can of whole tomatoes, 1 jalapeno,onion powder,and garlic powder,salt and about 3 cups water. Blend well and then put in a pot and bring to a boil. "IT HAS TO BOIL"

For the Green Sauce:
Boil about 10 jalapenos, b and salt, garlic powder, and onion powder blend and guess what you are done..these are simple aren't they??

And for the cheese always use AMERICAN CHEESE if you use any other you will be dissapointed.

And also just in case any of you wondered..they use soy meat for the tacos =O
