After eating this at LuLu's (Jimmy Buffett's sister) last week in Gulf Shores, I had to find the recipe. I did a search and here it is. Served, ala LuLu, on a Premium saltine...delish!

LULU'S LA (LOWER ALABAMA) CAVIAR

People just adore this very simple dish! It's perfect as party appetizer, or to keep in the frig for a quick snack. People have been asking me to can it for years, but it's so good fresh and takes about 5 minutes to make, I thought I'd just give you the recipe.

6 cans (15oz) blackeyed peas, rinsed and drained
1 cup cherry tomatoes, quartered
1/2 cup red onion, chopped
1/2 cup parsley, chopped
1/2 cup balsamic vinegar
1/2 cup olive oil
1/3 cup each of green, red, & yellow pepper, chopped
4 Tbsp sugar
Salt & Pepper to taste

Combine above ingredients and marinate for 24 hours.

Serve with saltines or tortilla chips.
