RENEE: Good Afternoon. Here is a chocolate sauce that is much more superior in quality than the one you described. It lends itself to altering. Do it sublety. A little more of this A little less of something else. Always write down the changes.
CHOCOLATE SAUCE
Renee, this recipe is great for ice-cream topping. It can be used for making a quick chocolate drink.
1/2 cup water 1/3 cup of light corn syrup 1/4 cup sugar 10 oz bittersweet chocolate, cut into 1/4 inch pieces 2 teaspoons vanilla extract Pinch of salt
Combine water, corn syrup, and sugar in a saucepan and heat on low. Now bring to a boil, stirring often.
Remove pan from heat and mix in chocolate. Let stand for 3 minutes till chocolate is melted.
Whisk until smooth. Add vanilla and salt.
Store the sauce in a tightly screw top jar in the fridge. You can use the syrup as is or heat if you like. When doing that, heat it in a pan set over a pan of heating water (like a double boiler method).
