This is a repost of one of my recipes. You can omit the chorizos, but beleive me, they give great flavor to the QUESO FUNDIDO.

Pork Chorizo (we use Spanish brands of chorizos) 12 ounces Queso Blanco (cheese) Indulac (this is a local brand of native white cheese. Monterey Jack Cheese is also good for the recipe) 8 ounces corn tortillas or tortilla chips
Cook the chorizo and drain off excess fat.
Put the chorizo in an oven-proof casserole dish.
Grate the Queso Blanco over the top and melt in a 350 degrees F oven until melted and bubbly.
Serve with either corn tortillas or tortilla chips.
