POLLO TROPICAL CHICKEN (COPYCAT)

I have been able to approximate the Pollo Tropical Chicken recipe by using a standard Cuban marinade:
Rub the chicken with mashed fresh garlic. Bathe the chicken with sour orange juice (jugo de naranja agria)*. Sprinkle with cumin. Add salt and pepper to taste (I omit the salt but I do use the pepper-sparingly). Let marinade at least two hours (I leave mine overnight).
Grill or broil until golden brown. I
*Sour orange juice is available in Latin supermarkets in bottled form. You can also approximate it by mixing equal parts of lime juice and orange juice. |
