IHOP is offering Carrot Cake Pancakes with Cream Cheese icing drizzled on top. They are alot like their Harvest Grain & Nut, except you can see the carrot bits. They also use coconut, which is very minimal, and not offensive to me. The nuts are obvious, & I love them! I'd like to find a recipe to make these @ home. I might make the icing lighter by using lower fat cream cheese, & maybe Splenda instead of powdered sugar(I think they use?). Anyone have a recipe??
