1 oz blended oil 4 oz crimini mushrooms, sliced 1/2 tsp garlic, chopped 1 tbsp basil, chiffonade 1 tbsp sundried tomatoes 1 tbsp caramelized onion 3 oz bercy 2 tbsp feta cheese, reserve 1 tbsp 1 1/2 oz herb butter (plain butter optional) 1 pinch salt and pepper 1 oz fresh spinach 7 oz penne pasta, cooked and drained 1 tsp pinenuts
Heat oil in pan. Add mushrooms, garlic, basil, sundried tomatoes, and onions; then saute.
Add bercy, feta, and herb butter. Season with salt and pepper. Add fresh spinach and toss in penne.
Garnish with 1 Tbsp feta and pinenuts.
