PASTA DIVINCI
1 box penne pasta 3 large boneless, skinless chicken breast, diced 1 large red onion, finely chopped 1 can sliced mushrooms, drained 2 tbsp minced garlic 1 cup Madeira wine 1cup heavy cream 1/2 cup sour cream butter
Cook pasta according to package directions. Place cooked and drained pasta in a separate bowl.
Heat oil in a skillet and saute chicken, onion, mushrooms, and garlic. Remove from skillet; set aside.
Add wine to (unwashed) skillet and simmer over medium heat until liquid is reduced 2/3.
Add heavy cream and sour cream; bring to a boil.
Remove from heat and swirl in butter. Toss with pasta and serve.... enjoy
