I have made this recipe for years. It is very easy and very good!
APPLE PANCAKE
FOR THE APPLE MIXTURE: 2 green apples, peeled, cored, and sliced 4 tablespoons butter FOR THE PANCAKE BATTER: 3 eggs 1/2 cup milk 1/2 cup flour FOR THE TOPPING: 1/2 cup sugar 2 tablespoons cinnamon 1/4 pound butter (1 cube/stick) Lemon (optional)
Preheat oven to 500 degrees F.
TO PREPARE THE APPLE MIXTURE: In a 10 or 12 inch oven proof skillet saute peeled, cored and sliced apples in 4 tablespoon butter until soft.
TO MAKE THE PANCAKE BATTER: Mix eggs, milk and flour together. Pour over apples.
Bake at 500 degrees until it puffs up and browns around the edges, approximately 10 minutes.
TO MAKE THE TOPPING: Mix sugar and cinnamon together. Set aside.
Melt 1/4 pound butter and pour over baked pancake. Sprinkle with cinnamon sugar mixture.
Return to oven for 5 minutes or until sugar melts.
Squeeze lemon over top before serving, if desired.
