HAM HEAVEN'S HEAVENLY HASH
2 cups ground cooked ham 2 cups potatoes, cooked and chopped (or thawed frozen shredded hash brown potatoes) 2 cups frozen shredded hash brown potatoes, thawed 1 medium green pepper, chopped (1 cup) 1 small onion, chopped 3 tablespoons butter, divided use 4 eggs
TO PREPARE THE HASH: In a mixing bowl, stir ham, potatoes, green pepper and onion together.
Heat a large heavy skillet or griddle over medium heat. Melt 2 tablespoons of the butter in a large skillet or generously butter a large griddle; spread skillet evenly with hash mixture or mound onto a griddle and flatten slightly. Cook over medium heat for 8 to 10 minutes or till brown; turn occasionally.
TO COOK THE EGGS: Meanwhile, melt remaining butter in a large skillet over medium heat or use the same griddle. Add eggs; cook till whites are just set. Turn and cook for 1 to 2 minutes for soft eggs, 3 to 4 minutes for firm. Yolks should be just set.
TO SERVE: Spoon 1/4 of the hash onto each warm plate; top with an egg "over easy."
