SALSA (recipe similar to Mexico Chiquito's)
3 cans of hunts whole tomatoes (or 2 large cans) 1/4 of a green bell pepper, chopped 1 tsp. salt 1 clove fresh garlic, crushed 3 or 4 fresh jalepeno peppers
Drain the juice from the tomatoes, reserve juice.
Place all ingredients, except juice, into a food processor using the grater blade. After all has run through, add to the reserved juice. Stir well. Best if chilled for 2 hours or overnight in the refrigerator before serving.
CHEESE DIP (recipe similar to Mexico Chiquito's)
1/2 stick (1/4 cup) margarine 4 tbsp. all purpose flour 2 cups milk (room temperature) 1/3 lb. Velveeta 1/4 cup of Rotel 1 tsp. Tabasco sauce 1 tsp. chili powder 1/2 tsp. paprika 1/4 tsp. cumin seed dash of garlic powder.
In a saucepan, melt margarine and add flour, stirring to make a paste.
Add milk, Velveeta, and Rotel to the margarine and flour paste; stir until cheese is melted.
Stir in the remaining ingredients.
