COPYCAT RAINFOREST CAFE CRAB CAKES3 ounces mayonnaise
3 egg yolks
1/2 lemon, juiced
1 tablespoon
Worcestershire sauce1/2 teaspoon
dry mustard1/2 teaspoon black pepper
1 pinch
red pepper flakes1 pinch
Old Bay seasoning1 pinch salt
1 1/2 cup fresh bread crumbs
1/4 cup finely chopped fresh parsley
1 pound lump crab meat
Olive oil for sauteing
Mix together the mayonnaise, egg yolks, lemon juice, Worcestershire sauce, dry mustard, pepper flakes, Old Bay seasoning, and salt in a mixing bowl; mix well.
Add the bread crumbs and parsley and mix well.
Carefully sift through the crab meat to remove any shells. Add crab meat to the mixture and mix in gently. Do not break up the crab meat.
Make into patties and saute in olive oil for 2 to 3 minutes on each side or until brown.
