I saw the episode, so here goes as closely as I can remember.

First she made the dough. It looked like a brioche dough. a sweeter more than savory dough. Anyway, after that she rolled it thin and put it in a sheet pan fully stretched to the edges and cut it in 1" to 1 1/2"strips about 6" long. Then she froze the dough. Then she cooked the coconut with sugar and a bit of water until it became a syrup. She then removed the cut strips from the freezer and put the coconut mixture on top of the frozen strips covering them totally. She then put it in the oven to bake until golden brown and crispy.

She had two versions of the coconut mixture...one without lime zest and one with. She also had them both dunked in chocolate.
