I, too, bought some "Aussie Bites" from Sam's Club, only instead of dried apricots, these contained dried cranberries. You could probably substitute dates, figs, or a variety of other dried fruits. This my take on a recipe I found on the Net.

AUSSIE BITES

2 cups rolled oats
2 cups whole-wheat (or whole-grain) pastry flour
1/3 cup light brown sugar
1/3 cup dark brown sugar
1 (3 1/2 oz.) can unsweetened coconut
1/4 cup roasted, salted sunflower seeds, chopped up
1/4 cup raisins, finely chopped
3/4 cup dried cranberries, cut in 1/4" pieces
1/4 cup light honey
3/4 to 1 cup unsalted butter
1 teaspoon baking soda
2 tablespoons hot water

Preheat oven to 350 degrees F.

Combine first six ingredients in a large bowl; set aside.

Melt honey and butter together in microwave; set aside.

Mix baking soda with hot water and add to butter mixture. Mix well.

Pour butter mixture into dry ingredients and mix well. Place heaping tablespoons (I use a small ice-cream scoop) of mixture into non-stick mini-muffin cups (no need to grease) and flatten mixture slightly.

Bake 15 minutes or until golden. Cool on wire racks.

"I played around with the amount of butter and got excellent results with only 3/4 cups of butter, while the cookies were a little more gummy inside with 1 cup. That may be because of my oven, so see what works best. These are pretty close to the ones from the store."

Makes 36 cookies
