I mixed it in bread machine but baked in oven to make it look like Publix. I served it for a Breakfast with Cream Cheese. It is very similar to Publix with the fruit, raisins. Enjoy, let me know how you liked it!

BREAKFAST FRUIT BREAD
Ingredients (use vegan versions):

1 2/3 cups apple juice
3 cups bread flour or any grain flour combinations you prefer
1 tsp salt
1 tbsp yeast
1 cups Toms mueslix or any kind that has whole oats, dates and seeds
1/2 cup raisins
1/2 cup coarsely chopped dried apricots
1/2 cup coarsely chopped dried pineapple
1/2 cup nuts of your choice

Place the apple juice, flour, salt, and yeast in to the machine set on medium or large loaf. This mixture will be wet but it needs to be! When you are at the point just before the last knead add all of the rest of the ingredients and let the machine finish its cycle. Let cool before using.

It is great as is or wonderful toasted!

It can be taken out of the machine and formed into a nice freeform loaf on a cookie sheet (can let rise until double) and baked in a preheated 350 degree F oven then lightly drizzled with frosting for a gift!


This is AMAZING. I didn't have all the dried fruit so I just used what I had. Dried apples/apricots. I used almond slithers, walnuts and sultanas of course. The apple juice seemed like a weird choice. But have faith everyone this recipe is well worth trying! Ohh and though it seems like a lot of yeast. It really is 1 tablespoon.
