The only dip that I know of doesn't have potato in it, but maybe it would also be good. I hope this helps...
TARATOOR B'SADE
30-40 Cloves garlic, skinned and chopped 6 Tbs. Olive oil 3 Tbs. Lemon juice Salt to taste
Put everything into the food processor or blender. Use a little water to obtain the puree texture you require.
