Heydays update: I made a new batch of Almond Heydays and wanted to let Heyday lovers know the latest. The almond version is so delicious that I don't care about duplicating Nabisco's peanut version. For my most recent try, I did use two layers of wafers with a caramel center in between. This made a HUGE difference in the chewiness and taste of the bar. I switched to a block bittersweet choclate I purchased in a natural foods grocery store, which was even better than the Ghiradelli chips. (I still thinned it with canola oil). I wanted to make a homemade caramel sauce, but didn't have time, so I used the Werther's again. I also didn't have time to coat the bottom side with chocolate, because we were going to have them for dessert right after our meal. I'm happy to report that the change in chocolate and the two layers of wafers made for a more delicious cookie bar. For those of you who can't find a Bosnian store, the wafers are available on line. There are other brands besides Oblatne. The wafer sheets are also known as "tort sheets." If you look online, you will find other recipes for the wafer sheets, if you can ever move on from the Heyday copycats. FYI, I would also suggest using hazlenuts for a different taste. Enjoy!
